Rice a roni is a very easy recipe, that tastes delicious and satisfying. A budget friendly and perfect side dish that is guaranteed to be a hit.
INGREDIENTS

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 1 red bell pepper diced
  • 4 cloves garlic minced
  • 1 1/2 cups long grain white rice I used basmati
  • 1 cup spaghetti broken into small pieces
  • 4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon red pepper flakes

INSTRUCTIONS

  1. Place a large pan over medium heat and add olive oil.
  2. Once the oil is hot, add the diced onion and cook stirring for 1 minutes.
  3. Add the diced bell pepper and minced garlic. Stir and cook for 2 minutes.
  4. Add the pasta pieces and cook until browned, about 3-4 minutes.
  5. Add the dry rice and cook stirring for another minute.
  6. Add the chicken broth, salt, pepper, dried parsley and red pepper flakes. Stir to combine and bring the mixture to a simmer.
  7. Reduce the heat to low. Cover the pan and cook for 20 minutes or until all the liquid is absorbed. You can stir the mixture once mid-cooking.
  8. Once cooked, don't lift the lid. Remove the pan from heat and let it stand for 10 minutes. After that, fluff with a fork and garnish with chopped parsley.
