HERBED RICOTTA & TOMATO TOAST
Ingredients:
- 11/2 cups ricotta cheese
- 2 tsp finely chopped fresh herbs (we like thyme, parsley or basil)
- Zest from 1 lemon
- pinches of sea salt and freshly cracked black pepper
- 4 thick slices multi-grain bread
- 1 cup sliced cherry tomatoes
- Olive oil for drizzling
- Sea salt for sprinkling
Recipe Directions:
- 1 In a medium bowl, stir together ricotta, herbs, lemon, salt and pepper. Set aside in fridge until ready to use.
- 2 Toast bread in a toaster or alternatively, place slices of bread on a baking sheet and place under the broiler for 2 minutes, until toasted.
- 3 Place toast on a clean flat work surface and spread each with ricotta mixture. Layer with tomato slices. Drizzle each with olive oil and sprinkle with sea salt and freshly cracked black pepper. Serve immediately.
