CAULIFLOWER FRIED RICE

This Cauliflower Fried Rice is a low-carb and high-protein dinner recipe full of vegetables and Asian-Peruvian flavor. 30 minutes from start to digging in.
Ingredients
- 1 large head cauliflower
- 1 large chicken breast (about 10oz/300g)
- 4 eggs
- Salt
- Pepper
- 1/2 cup diced carrots
- 1/2 cup diced red bell pepper
- 1/2 cup diced yellow bell pepper
- 4 spring onions
- 2 cloves garlic
- 2 tsp grated ginger
- 1-2 tsp ají amarillo (optional)
- 4 Tbsp soy sauce
Instructions
- Heat a large heavy-bottom pan that has a lid over medium heat.
- Heat a regular sized pan over medium heat.
- Salt and pepper chicken breast on both sides.
